It covers all topics aimed at the things women are concerned about. You can join the site and then contribute to the forums on any of the topics that you are interested in.

 

iVillage is a fount of knowledge, purely because of the fantastic contribution made by women from all around the country. It’s a great site for getting to know other people and sharing experiences.
 

It can be very therapeutic to just chat with other women about subjects that relate to you and that they can also discuss.  Sharing experiences certainly makes you feel that you are not alone.

Don’t you love the flexibility of the internet? I can do my shopping any time of the day or night – this suits my lifestyle as I can go to work, pick up my son from school and then do the weekly shop online.  No trailing moaning children round the shops. This is a major benefit as all parents know.

 

I love browsing the internet for gift ideas whether it’s for Birthdays or Christmas. My son realises that I am hooked on eBay not just for buying but selling too. The poor love picks out toys he doesn’t play with much and quickly says ‘Mummy, don’t sell it on eBay’.

 

Of course he doesn’t complain when I find that elusive character toy - Disney Cars - being popular just now on eBay, not to be found anywhere on the high street.

 

It’s a great tool for ideas for the people who have everything, or for getting that must have Christmas present. Shopping around online will save you money of course you know that.

Recipe of the Month
 


Chocolate Mousse

Ingredients:

 

4 medium eggs separated (room temp)

4oz caster sugar

4oz plain chocolate

3tbsp cold water

½ pint double cream

Flake/rasps/buttons etc to decorate

 

Method

 

1.Whisk egg yolks and sugar until thick like mousse

2.Melt choc with water in a jug over a pan of barely simmering water

3.Take off heat, cool slightly then whisk in egg yolk mix

4.Whip cream until it stands in small peaks then carefully fold into choc mix

5.Whisk egg white until stiff

6.Fold 1 tablespoon of egg white into mixture then fold rest in

7.Put in large bowl or individual glasses and put in fridge to set (3hrs or overnight) then decorate.

Canadian Roll

 

Ingredients:
 

13 Digestive Biscuits

13 Marshmallows

13 Cherries

1 tin Condensed Milk (405g)

Desiccated Coconut

 

1.  Crush biscuits, chop marshmallows & cherries. Mix together with condensed milk.

2.  Roll into a sausage shape, then roll in coconut.

3.  Wrap mixture in tinfoil and leave overnight on fridge to chill and set.

4.  Slice into even sized slices

5.  Enjoy



Creole Chicken

 

You can spice up this dish if you like by adding chilli, or make a smooth sauce by liquidising the ingredients before adding the chicken.
 

For a vegetarian option, use Quorn instead of chicken

 

Ingredients
 

1 tbsp olive oil

1 large onion, peeled and finely chopped

1 large carrot, grated or finely chopped

1 stick of celery, trimmed and chopped

2 tsp ground coriander

1 x 400g can chopped tomatoes

150ml orange juice

2 tbsp tomato puree

Salt and pepper to season

500g diced chicken

2 tbsp fresh snipped chives to garnish

 

 

1. Heat the oil in a large pan and gently fry the onion, carrot and celery with the pan covered for 10 mins or until the onion is soft.
 

2. Add the coriander and cook for 2 mins (add 1 tsp chilli powder, too, if you like a touch of spice), then stir in the tomatoes, orange juice and tomato puree, cover and simmer for 15 mins.
 

3. Add the diced chicken, season and simmer for 10 mins or until the chicken is cooked.
 

4. Snip the chives over and serve accompanied with a green vegetable of your choice.



Ratatouille

 

Hearty and warming – perfect for those winter evenings.

 

Serves 4

Preparation time – 15 minutes

Cooking time – 30 minutes

 

Ingredients

 

1 Tablespoon olive oil

4 carrots chopped

1 red onion

2 courgettes

2 peppers chopped assorted colours

1 400g tin tomatoes

1 teaspoon mixed herbs

½ teaspoon brown sugar

Salt & pepper to season

 

1. Heat oil and sauté onion until soft.

2. Add carrots, peppers and courgettes.

3. Cook with lid on for 15 minutes.

4. Then add herbs, tomatoes, brown sugar, salt & pepper.

5. Simmer for 15 minutes until reduced.

 

Delicious served with a dollop of Greek yoghurt on the top.
 


Easy Banoffie Pie

 

Ingredients

 

100g (4oz) Digestive Biscuits

100g (4oz) Ginger Nuts

100g (4oz) Margarine

1 tin Nestle Caramel

3 medium bananas

1 medium carton Double Cream

 

 

1. Crush biscuits

2. Melt margarine and add crushed biscuits. Mix well

3. Spread mixture evenly onto base of a 9cm round tin then set aside to cool.

4. Allow to cool for an hour.

5. Spread caramel onto cooled base.

6. Slice bananas and place evenly on top of caramel.

7. Whip cream and then spread on top of bananas.

8. Put into fridge to set for about 20 minutes.

9. Serve and enjoy.

 

 

Perfect Roast Potatoes

 

Preparation: The most important starting point is the right potato. In my book that's a red-skinned main crop potato such as Desiree - this is a waxy textured potato that will hold together well while you shake the roasting tin or turn during cooking.
 

Peel the potato and cut into large chunks - usually quarters or thirds depending upon the size of the potato. Parboil the potatoes in a pan of boiling salted water for 5 minutes just to begin to cook the outside.
 

Drain them in a colander and shake vigorously to fluff up the outside - this is what gives them that lovely crunchy finish once roasted.
 

Cooking: While the potatoes are parboiling, heat the fat in the roasting tin. Choose a non-stick one so the lovely crispy bottom of the potatoes doesn't get stuck.
 

For the fat, there are quite a few choices. Olive or sunflower oils are perfectly good but I always add a good knob of butter to mine because it gives the best golden brown colour and the addition of oil means they're less likely to burn.
 

So, heat a good spoonful of oil and butter in a non-stick roasting tin and once it's very hot, add the fluffed potatoes, shaking well to coat them in the oil. Season generously with salt then quickly return to the oven for 45-60 minutes, turning once or twice until golden and crunchy.

You can also try adding Rosemary to tin to give a lovely flavour.

 

Tips:  Remember never to overcrowd the tin, choose one that's not too deep (so that the potatoes can colour) but is big enough for the potatoes to sit a single layer.
